There are two main types of martabak in Indonesia: martabak manis, which is sweet, and martabak telur, which is savoury. Here’s a simple recipe for both:
What You Need for Martabak Manis:
- 1 cup of all-purpose flour,
- 1/2 cup of granulated sugar,
- 1/2 cup of water,
- 1/2 cup of milk,
- 1 egg,
- 1/2 teaspoon of baking powder
- – 1/8 teaspoon salt
- – Grease the pan with butter or margarine
- You can choose your own toppings, like peanuts, cheese, chocolate sprinkles, condensed milk and so on.
Step by Step:
1. Put the flour, sugar, salt, and baking powder in a mixing bowl and mix them together.
2. Mix the egg, water, and milk together in a different bowl using a whisk.
3. Slowly add the wet ingredients to the dry ones while mixing constantly until a smooth batter forms. Allow the batter to sit for 15 to 20 minutes.
4. Put a nonstick pan on medium heat and use butter or margarine to lightly grease it.
5. Spoon a small amount of the batter onto the pan and spread it out thinly so that it covers the whole surface.
6. Cook the batter for two to three minutes, or until the bottom is golden brown and the top starts to bubble.
7. Add the toppings of your choice to the batter.
8. Fold the Martabak’s sides in towards the middle to make a square.
9. Keep cooking for one to two more minutes, or until the toppings melt and the Martabak is fully cooked.
10. Take it out of the pan and cut it into smaller pieces. Warm up and serve.
What You Need for Martabak Asin:
- 1 cup water,
- 2 cups all-purpose flour,
- 2 eggs
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground white pepper
- 2 green onions, cut up small
- 1/2 cup cooked ground meat (lamb, chicken, or beef)
- 1/8 cup of grated cabbage
- 1/8 cup of grated carrots
- 2 tablespoons of vegetable oil
- Pepper and salt to taste
- Chilli or sweet soy sauce to serve
Here are the steps:
1. Put the flour, water, eggs, salt, and ground white pepper in a bowl and mix them together. Use a whisk to make a smooth batter. Take a break for 15 to 20 minutes.
2. Put a nonstick pan on medium heat and add 1 tablespoon of vegetable oil.
3. Spread out half of the batter thinly over the whole surface of the pan by pouring it on.
4. Put half of the green onions that have been chopped on top of the batter.
5. Put half of the cooked ground meat, cabbage shreds, and carrot shreds on top of the green onions.
6. Add salt and pepper to taste.
7. Cover the filling fully with the rest of the batter.
8. Put it in the oven and cook for four to five minutes, or until the bottom is golden brown.
With care, turn the Martabak over and cook for three to four more minutes, until the other side is golden brown.
10. Take it out of the pan and cut it into smaller pieces. Hot food should be served with chilli or sweet soy sauce.
